Yesterday in a post Elegant, Impressive and Affordable Client Gifts, 2008, I shared the recipe for Kahlua. Members requested more recipes that possibly could be used for client gifts. So here are the ones you asked for.
Margaret Mitchell, York Maine Real Estate asked for the Amaretto recipe
Amaretto
1 lemon 
3 cups sugar
2 cups water
2 teaspoons pure vanilla extract
3 cups vodka (again, the cheap stuff works great!)
1 tablespoon chocolate extract
3 tablespoons brandy (any brand is ok)
2 tablespoons almond extract
Peel lemon and cut zest into thin strips. Combine with sugar and water in pot and bring to boil over medium high heat, stirring often. Cover and reduce heat to low--allow to simmer for 30 minutes. Remove from heat; remove and discard zest. Place in refrigerator to cool (45 minutes to 1 hour). Remove from refrigerator and add remaining ingredients, mixing well. Store in cool, dark place to ripen for a minimum of 10 days before serving. Makes 1 1/2 gallons.
Larry Story, Greensboro, North Carolina wanted to know how to make Fruit Cordials and Bailey's Irish Cream, these are for you, Larry.
Fruit Cordial
2 cups sugar
2 cups vodka (cheap works great)
2 cups crushed fruit (raspberry, cranberry, cherry, etc.--these make a beautiful red color liqueur)
Mix together well and place in a covered jar. Place in a dark, cool place for 3 weeks. Strain through cheesecloth and pour into decorative bottles.
I've never made the Bailey's Irish Cream but obviously, it would have to be refrigerated.
Bailey's Irish Cream
1 1/3 cups Irish Whiskey
1 (14 ounce) can Eagle Brand Sweetened Condensed Milk
1 cup whipping cream
4 eggs
2 tablespoons chocolate syrup
2 teaspoons instant coffee
1 teaspoon vanilla extract
1/2 teaspoon almond extract
Pour all ingredients into blender and blend until smooth.
And Kathleen Buckley, Hopkinton, Massachusetts asked for a dipping oil recipe.
Italian Dipping Oil
- Italian Seasoning, to taste
- Crushed Red Pepper, to taste
- Kosher Salt to taste
- grated Parmesan cheese, to taste
- 2 tablespoons olive oil
Blend Italian Seasonings, crushed red pepper, kosher salt and grated cheese in small bowl
Pour olive oil over spices to cover and moisten. Serve as a dipping sauce with your favorite crusty bread. Makes 2 servings.

Cheesy Dipping Oil
- olive oil (enough to cover plate)
- Parmesan cheese (you decide how much --a little or a lot -- but use good quality--make sure to grate it into the oil)
- cracked pepper (not too much, maybe 1/5 the amount of the cheese)
- balsamic vinegar (this is the "secret" ingredient... but don't use too much just about 5-7 drops is enough)
Combine in shallow bowl or plate. The vinegar gives it a great boost, be ready!
As you can see, I'm a bottomless pit for recipes. My Mom has been a recipe collector for 40+ years and I inherited the gene. I really should publish a cookbook---in my spare time. LOL!!!!
